BREAKFAST CASSEROLE

Grease a 9 X 13 pan.  Take 6 slices of white bread.  Cut off the crusts and cut each slice in half.  Place in bottom of pan.  Then brown 1 lb. of ground sausage (Jimmy Dean Maple flavored, is really, really good).  Once browned, spoon the sausage over the bread slices.  Cover the bread and sausage with 8 oz. of cheddar cheese.  In a bowl, whisk together 8 large eggs, 2 cups milk, 1 tsp. dry mustard, 1/2 tsp. salt, and 1/4 tsp. black pepper.  Pour the egg/milk mixture over the bread, sausage, and cheese.  Bake at 350 degrees for about 40 minutes.





SLOW COOKER TACO SOUP
1 pound of ground beef
1 small diced onion
1 finely diced green pepper
1 (16 oz) can (drained) kidney beans
1 (16 oz.) can (drained) chili beans,
1 can whole kernel corn (drained),
1 (8 oz) can tomato sauce,
2 cups of water,
2 (14 oz) cans of diced tomatoes,
1 (4 oz) can diced green chilies,
1 package of taco seasoning mix
Directions
Brown 1 pound of ground beef, with 1 small diced onion, and 1 finely diced green pepper.  After browed, put in a crock pot.  Add: 1 (16 oz) can (drained) kidney beans, 1 (16 oz.) can (drained) chili beans, 1 can whole kernel corn (drained), 1 (8 oz) can tomato sauce, 2 cups of water, 2 (14 oz) cans of diced tomatoes, 1 (4 oz) can diced green chilies, 1 package of taco seasoning mix.  Stir to mix all ingredients together, and cook on low setting for about 6 hours.

SLOPPY JOES
1  1/4 lbs. of ground beef
1/2 diced green pepper
1/2  diced onion
3/4 cup of ketchup
2 minced garlic cloves
1 tbs. brown sugar
1 tsp. chili powder
1 tsp. dried mustard
dash of hot sauce
dash of worcestershire sauce
salt and pepper to taste
1/2 cup of water
Brown 1  1/4 lbs. of ground beef with 1/2 diced green pepper and 1/2  diced onion.  Add 3/4 cup of ketchup, 2 minced garlic cloves, 1 tbs. brown sugar, 1 tsp. chili powder, 1 tsp. dried mustard, dash of hot sauce, dash of worcestershire sauce, salt and pepper to taste, 1/2 cup of water.  Simmer over medium low heat for about 20 minutes.  (You can certainly double or triple this recipe.)
