Hootenannies

6 eggs
1 cup  milk
1 cup flour
½ tsp salt
1 tsp sugar
Melt ½ stick butter in cake pan at 400 degrees while mixing other ingredients in blender on high .  Put in pan and cook 20 minutes

 CHILI

2 lbs. of hamburger
1 finely diced onion
1 finely diced green pepper
2 8 oz. each cans tomato sauce
4 cans (14.5 oz. each) diced stewed tomatoes
4-5 cans of kidney beans
2 tablespoons of chili powder 
1  1/2 teaspoon black pepper
2 teaspoon salt
little sugar
Brown 2 lbs. of hamburger with 1 finely diced onion and 1 finely diced green pepper.   Put in large sauce pan--add 2 (8 oz. each) tomato sauce, and 4 (14.5 oz. each) diced stewed tomatoes.  Drain 4-5 cans of kidney beans.  Add to meat and tomato mixture.  Season with a scant 2 tablespoons of chili powder, 1  1/2 teaspoon black pepper, 2 teaspoon salt, and a little sugar. Simmer for 1  1/2 hours stirring every 15 minutes.  If it appears a little too thick, add a little tomato juice.

ENGLISH TOFFEE
Ingredients
2 1/2 sticks of unsalted butter 
2 1/4 cups sugar 
1 teaspoon salt,
1/2 cup water
3/4 cup of finely chopped blanched almonds
3/4 cup of finely chopped blanched almonds 
1/2 cup chopped pecans
1 teaspoon vanilla
6 ounces milk chocolate chips
3/4 cup chopped pecans
Directions
In a heavy duty sauce pan, combine 2 1/2 sticks of unsalted butter, 2 1/4 cups sugar, 1 teaspoon salt, and 1/2 cup water.  Over medium heat, bring to a boil, stirring constantly.  (Use a wooden spoon.) Once the mixture is boiling, add 3/4 cup of finely chopped blanched almonds.  Attach a candy thermometer.  Continue stirring continuously, and cook until hard crack stage.  (About 300-310 degrees.)  Remove from heat, add another 3/4 cup of finely chopped blanched almonds, 1/2 cup chopped pecans, and 1 teaspoon vanilla.  Spread mixture on a buttered cookie sheet.  Quickly spread mixture over the pan with the back of a spoon.  Top with 6 ounces milk chocolate chips, cover with aluminum foil, to allow the chips to melt.  Spread the chocolate over the toffee mixture. Top with 3/4 cup chopped pecans.  Allow to cool in fridge for several hours before breaking into pieces.

CARAMELS

Ingredients
1 cup butter
1 cup brown sugar
1 cup white sugar
1 cup corn syrup
1  (14 oz.) can Eagle Brand Sweetened Condensed Milk
Dash of salt
Directions
Combine all ingredients in a heavy duty saucepan.  Using a wooden spoon, stir constantly over medium heat until mixture reaches soft ball stage (240 degrees).
Pour into a buttered glass pan. (About a 7 X 11 pan, or something close to that.)  Allow to cool on countertop  for about eight or nine hours.  Cut into squares and wrap in wax paper. Store in a good container in fridge.

Crepes

Ingredients

2 eggs
1 1/4 cup milk
1 cup flour
1/4 tsp salt
2 tbsp melted butter

Directions

1. Beat together the eggs and milk in an electric blender
2. Sift the flour with the alt and add to the egg and milk mixture
3. Add the melted butter and blend thoroughly
4. Allow the mixture to stand for at least an hour before using. If the batter is too thick add a little milk and mix
5. Pour 1-2 tablespoons of the batter in the center of a hot lightly oiled frying pan. Tilt to spread the batter to the edges of the pan. Cook until the top is dry. Turn over and cook the other side for about 15 seconds.

CARAMEL CORN

Prepare about 4 quarts of popcorn--do not salt or butter--place in a large bowl.

Prepare caramel topping--In a heavy duty saucepan, put two cups of packed brown sugar, and  1 cup of Karo syrup.  While stirring with a wooden spoon, bring mixture to a boil over medium heat.  Continue to stir and allow to continue to boil for 6 minutes.  Remove from heat, add, 1 cube of butter (1/2 cup), 1 can of EagleBrand Sweetened Condensed Milk, and continue to stir until you have a smooth topping.  Add 2 tsp. of vanilla.  Pour over the popped corn, and  stir together until the caramel topping has coated the popcorn.   


CHICKEN NOODLE SOUP
This is the easiest, very tastiest chicken noodle soup recipe you will ever see!
4 cups of chicken broth
1/2 cup of finely diced onion
1 medium carrot sliced
1 stalk of celery sliced
Generous dash of black pepper
Mix broth, pepper, carrot, onion, and celery in saucepan.  Heat to a boil.  Once at a boil, stir in 1 cup of cubed, cooked chicken, and 1 cup uncooked medium egg noodles.  Cook over medium heat 10 minutes or until noodles are done.

MEAT LOAF
To  1 1/2 lbs. hamburger, add 1/2 finely diced green pepper, about 1/4 cup of finely diced onion, 1 stalk of finely diced celery, 1/4-1/2 cup of bread crumbs, 1 egg, about 1/4 + cup of ketchup, 1 tsp. salt, 1/4 tsp. black pepper.  Combine together, and divide into two loaves.  Place in 9 X 13 pan.  Place in 350 degree oven for about 60 minutes.  While baking, combine the following ingredients--1 cup ketchup, 3 tsp. mustard, 1/3 cup brown sugar, and dash of worcestershire sauce.  About half way through baking time--pour topping over loaves.  Continue baking until the internal temperature is 160 degrees.  (Total baking time is about one hour.)  Let loaves sit for about fifteen minutes before slicing

MARINARA SAUCE
This is a great recipe for marinara sauce. Use as a sauce over any pasta, and top with cheese.  Add a lettuce salad, and you have a meal.
In a saucepan, put 1/4 cup olive oil, along with one minced onion, and 2 minced garlic cloves.  Saute the onion and minced garlic in the oil.  Add 3 (14.5 oz) cans of diced or crushed Italian tomatoes (these canned tomatoes already have basil and oregano added. )  Add 1/2 tsp. salt, 1/4 tsp. pepper, and a little sugar (to taste).  Bring to a boil, reduce heat, and simmer for about 30 minutes.


MONTE-CRISCO SANDWICHES

On a slice of French Bread, put a slice of thinly sliced ham, and thinly sliced Swiss Cheese.  Top with another slice of French Bread.
In a bowl, whisk 6 eggs, 1 cup of milk, and 4 Tb. granulated sugar. 
Heat a non-stick griddle on medium-medium high heat. 
Dip the sandwich into the egg mixture, and place on grill.  Allow to cook for several minutes, turn the sandwich over, and let cook for another couple of minutes. 
Cut in half, and top with powdered sugar, and strawberry syrup.
 
WONDERFUL CHICKEN RECIPE


In crock pot place 6 chicken breasts.  In a bowl, combine 1 can cream of chicken soup, 1 (8oz.) package cream cheese (softened), 1 envelope Italian Salad Seasonings.  Pour on top of the chicken breasts.  Cook on low for 5-6 hours.

MACARONI AND CHEESE
Bring  1  3/4 cups of penna pasta to a boil.  Cook until just tender.  Drain.
In a medium saucepan over medium heat, melt 1/4 cup of butter.  Quickly add 1/4 cup of flour, and allow to cook for about one minute.  Add  2  1/2 cups of milk, and whisk until thickened.  Add 1/2 tsp. salt, 1/2 tsp. dry mustard, 1/4 tsp. black pepper, and 1/8 tsp. paprika.  Add about three cups of grated medium cheddar cheese.  Remove from heat, and stir until you have a smooth cheese sauce.  Add prepared penna pasta.  Butter an  8 X 8 pan or 9 X 9 pan, and pour in the pasta and cheese sauce.  Bake uncovered  at 350 degrees for about 25-30 minutes.  If you desire, you can top the macaroni and cheese with buttered bread crumbs before putting in the oven to bake.
 
ALFREDO SAUCE
In a saucepan, over low medium heat, bring together 1/2 cup butter, 8 oz. cream cheese (softened), 1 cup Half/Half, and 1/3 cup of grated Parmesan Cheese, 1 tbs. garlic powder, and a little pepper.   (I do not use the finely granulated Parmesan Cheese in the jar. ) Stir together until smooth.  Serve over any pasta.
